Nablusia dates

Dough- Three quarters of a cup of flour .
- A quarter cup of water.
- Pinch of salt.
Semolina filling
- Half a cup of coarse semolina .
- Half a cup of sugar.
- Two cups of water.
- Sugar powder and mixed nuts, for garnish.
How to prepare
- To prepare the dough: In an electric dough bowl, put the flour and salt, and gradually start pouring water with kneading until we get a soft, sticky dough.
- We continue to knead for five minutes by kneading.
- We divide the dough into eight equal sections, then put the dough sections in a bowl greased with a little oil.
- Cover the bowl and set aside until the dough rest for five hours until an entire night.
- To prepare the filling: In a saucepan over the heat, put the sugar, water and semolina, and stir the ingredients over medium heat until boiling.
- Leave the mixture to cool slightly and continue stirring to obtain a thick mixture.
- Pour the sweetness into a rectangular tray, leave it to cool, then cover it with transparent nylon and put it in the fridge until it sticks.
- Take the sweetness out of the fridge and cut it into eight equal pieces.
- Spread each dough section separately as a thin square on a hard surface greased with as little oil as possible.
- We put a piece of semolina sweetness in the center of each dough section.
- We take a corner of the dough and put it on top of the filling.
- We return the ball with the rest of the corners until we close all the ends of the dough on the filling and get a square shape and do not put the dough too much on the filling.
- We lightly and slowly press the palm of the hand over the rectangle, until it becomes a little thin.
- We return the ball with the remaining dough quantities.
- Heat a sufficient amount of oil in a saucepan, then put the dough pieces in the heavy oil and transfer them until they are tender and golden brown and crunchy.
- We remove the dates from the oil and filter them into paper tissues.
- When applying, sprinkle powdered sugar over each dates and serve immediately. It is hot.
Date balls

- Two hundred and fifty grams of pitted dates, Ajwa.
- Two tablespoons of cocoa.
- A teaspoon and a half of Nescafe dissolved in half a cup of boiling water.
- A quarter cup of nuts.
- A quarter cup of pistachios.
- A quarter cup of hazelnuts.
- Half a cup of ground almonds.
How to prepare
- Grind the nuts, pistachios and hazelnuts in an electric mixer until smooth mixture is obtained.
- Put the ground nuts mixture in a medium bowl, with cocoa, dates or pasta and coffee.
- Mix the ingredients until we get a homogeneous mixture like dough.
- We take a measure of the mixture, decorate it with and then dip the ball with ground almonds from all sides.
- We return the ball until the quantity is over.
- We distribute date balls in a serving dish.

- Two tablespoons of olive oil.
- Pinch of ground cardamom.

- Ground tea biscuit.
- Sesame.
- Ground pistachio
- Grated coconut .
How to prepare
- We put dates or pasta in a bowl with cardamom and olive oil, and knead the ingredients well by hand for a smooth dough.
- Add the crushed biscuit over the bowl, knead the ingredients again to get a smooth dough.
- Divide the dough and start making balls of equal size.
- We decorate the date balls in ground pistachios, sesame , coconut, or crushed biscuits, or serve them plain and then put them in a serving dish.
